Red or Green?
Caldito, Caldo, or Caldio is the "Poor Man's Stew" for New Mexicans. This classic recipe has just a few simple ingredients but is absolutely delicious. This stew is perfect for any occasion and is sure to be one of your new favorite recipes. I know you're gonna love it!

Ingredients
  

  • ½ lb. Ground beef
  • 4 Medium size potatoes (you can use russet or red)
  • 2 tbsp Flour
  • 1 tsp Salt
  • ½ cube Beef broth or, swap 1-cup water for a 12oz can of beef broth
  • 4 cups water

Instructions
 

  • Peel potatoes and slice into ¼-inch pieces into a bowl; I use a paring knife and slice according to the edge of the potato, set aside.
  • Brown ground beef until the meat is no longer pink.
  • Add potatoes and cook with beef for approximately 2 minutes.
  • Add flour to beef and potatoes and cook for another 2 minutes.
  • Add water while continually mixing all ingredients to combine.
  • Put ½ cube of beef broth into the mix, and bring to a boil.
  • Once boiling, add salt, mix, turn heat to low, cover and simmer for 30 minutes, or until potatoes are tender.
  • Garnish with chopped cilantro, green onion and green chile*.

* I don’t add green chile initially, because it then becomes a low-grade green chile stew (unless that's what you're going for!)
