New Mexican Menu

  • 1 half pan Red Chile Beef Enchiladas
  • 1 half pan Green Chile Chicken Enchiladas 
  • 1 half pan Red Chile Cheese Enchiladas
    • Lettuce, tomato and onion garnish

SIDES

  • Chef Eric’s Family Recipe Salsa (serves 40-50)
  • 1 half pan of Spanish rice with red and yellow peppers, cumin and olives
  • 1 half pan of beans with chicos
  • 1 half pan of chicken posole. 
    • Mexican oregano, lemon wedges, and sour cream for garnish
  • 1 full pan of Chef Eric’s Blueberry Graham cracker dessert

Chimayo red chile is used. Green is from Lemitar. Ground beef is from our family ranch in Alcalde. Everything is made from scratch. Olives can be added to enchiladas at no extra charge.
