Red or Green?Here we're going learn a classic New Mexican dessert: Natillas. Natillas is a light, airy egg pudding with flavors like cinnamon & vanilla. It's the perfect dessert to curb your cravings, but also light enough to be guilt-free! My grandma made this dessert for us all the time growing up, and for good reason: it's simple to make, uses everyday ingredients, and tastes delicious. You're gonna love this recipe!

Ingredients
- 4 cups Milk
- ½ tsp Salt
- 2 tsp Vanilla
- ⅓ cup Flour
- 1 cup Sugar
- 4 Eggs Separated
- Ground Cinnamon For garnish
Instructions
- In a medium sized saucepan, warm milk.
- In separate bowl beat egg yolks, add sugar, flour and salt.
- Temper (mix in small amounts to warm the egg mixture, but not cook the eggs) mixture with about 1/2 to 1 c of warm milk.
- Add mixture to saucepan and heat until boils and thickens, about 5-7 minutes.
- Add vanilla, and remove from heat.
- In large bowl beat egg whites until stiff, fold egg whites into mixture.
- Sprinkle top with cinnamon.
- Place in fridge, and let cool for at least 2 hours.
- Serve this desert cold.
