In 1880 Charles Nicholas Appert, a French confectioner, invented special food preservation jars called “Appert jars” based on glass Mason jars. By 1885 he had started to create larger metal cans to preserve food. Martinus Van Desaan of the Netherlands placed tinned food on the market in 1885 at the World Exhibition in Paris and Napoleon Courtlandt of Alameda, California opened the first large-scale sardine cannery in 1895.
