Ingredients
- 1 ½ - 2 pounds Pork Loin Roast
- 1 quart Water
- 1 tsp. Oregano
- 1 ½ tsp. Salt (2 Portions)
- 2 tbsp. Canola Oil
- 2 tbsp. Flour
- 1 cup Reserved Broth
- 1 cup Water
- 2 cups Chile Carribe
- 1 tsp. Garlic
Instructions
- Cook pork roast in a pressure cooker for 2 ½ hours along with 1 teaspoon salt and oregano.
- Once cooked, shred the meat and set it aside.
- Heat oil on medium heat for about a minute, next add flour and cook for another minute.
- Add chile carribe, salt, and garlic and stir continuously for a couple of minutes, then add broth, water and continue stirring with a whisk until it is smooth.
- Once it starts to boil, you will know if you need to add any additional water.
- Now add the meat, and turn heat down to a simmer.
- Cook on low for about 20 minutes.
- Serve immediately, or store in the refrigerator and reheat when ready to eat.
