TORREJAS DE HUEVO w/RED CHILE SAUCE
Marcy InspiredThis recipe for Torrejas de Huevo with a delicious Red Chile Sauce has a long history in northern New Mexico. It's no wonder it's mentioned in the pages of an award winning book about a Hispanic family that moved from New Mexico to Wyoming during the Great Depression. The book is titled, "The Wind Called My Name," and recently author, Mary Louise Sanchez shared her recipe for Torrejas with me. Also called "Tortas de Huevo," they're light and fluffy egg fritters that are smothered in a spicy but flavorful New Mexico chile sauce. Equipment
- 2 Mixing Bowls (small & large)
- Electric hand mixer or whisk
- Frying pan
- Saucepan

Ingredients
For the Torrejas de Huevo:
- 3 room temperature eggs, separated
- 2 tbsp. flour
- 1 tsp. salt
- 6 tbsp. fat for frying
For the Red Chile Sauce:
- 2 tbsp. oil
- 2 tbsp. flour
- 3 tbsp. NM red chile powder
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1 1/2 cups water
Instructions
- Heat 2 Tbsp. oil in a large skillet over medium low heat.
- Add 2 Tbsp. flour and blend for 1 minute.
- Add in chile powder and stir for 30 seconds, keeping in mind that chile scorches easily and you don’t want it to have a bitter taste.
- Have your water ready to go and carefully pour it in.
- Stir with a whisk to break up any lumps.
- Let it come to a boil.
- Add garlic powder and salt, and mix to combine.
- Simmer a couple more minutes, then remove from the burner.
- You should be left with a delicious, smooth red chile sauce.
- Cover and set aside while making torrejas.
- Separate eggs, placing yolks in small bowl, and whites in larger bowl.
- Use electric hand mixer to beat whites until fluffy.
- Gently fold in yolks, flour, and salt.
- Heat frying pan on stove over medium-high heat with oil.
- Drop egg mixture by the spoonful into frying pan, and fry until both sides are golden.
- Serve while hot, and smother with red chile sauce.
