Ingredients
- 3 tbsp. Butter
- 1 Small yellow onion, finely chopped
- 2 Garlic cloves, minced
- 1 Large head of broccoli/3 cups broccoli florets
- 2 Carrots, shredded (optional)
- 2 cups Vegetable or chicken broth
- 2 cups Heavy cream
- 2 cups Shredded cheddar cheese
- 1/4 tsp. Nutmeg
- Salt & pepper to taste
Instructions
- Melt butter in large pot over medium high heat.
- Add in onions and sauté until almost translucent.
- Add in minced garlic, and sauté an additional minute.
- Add in broccoli florets, carrots, and broth.
- Let it come to a boil and cook approximately 10 minutes until broccoli is cooked tender.
- Add in heavy cream and reduce heat to low.
- Add in shredded cheese, salt, pepper, and nutmeg.
- Stir to combine and let simmer approx.
- 5 minutes. Remove from stove and enjoy!
