Chocolate Peanut Butter Pie

It's creamy and delicious, with bits of mini peanut butter cups, and a homemade pie crust that is made with Oreo cookies. It doesn't get much better than that. Read on for the full recipe.

Ingredients
For the crust you will need:
- 25 Oreo cookies
- 5 tbsp. melted butter
For Pie Filling you will need:
- 1 cup peanut butter (creamy or crunchy)
- 1 8oz. package cream cheese softened
- 1 cup confectioners or powdered sugar
- 1 tub cool whip
- peanut butter cups mini
Instructions
For the crust
- Place cookies in a food processor and pulse until turned into crumbs.
- If you don't have a food processor, place cookies in a ziplock bag, seal, and use a rolling pin to break them up.
- Once cookies are a ground into a course, sandy consistency, add melted butter and mix.
- Then place crumb mixture into a 9" pie plate and press down with spoon to form a smooth crust.
- Chill in refrigerator while you prepare pie filling.
For Pie Filling
- Place cream cheese in large mixing bowl, and cream until smooth using electric hand mixer.
- Add powdered sugar a little at a time and continue mixing.
- Add in peanut butter and mix until well incorporated.
- Coarsely chop a small handful of mini peanut butter cups and add to mixture. (This will add a lot of richness to the pie, so be careful not to add too many.)
- Gently fold in peanut butter cups along with tub of whipped cream and mix until well blended.
- Pour pie filling into pie crust and evenly spread it to form pie, being careful to smooth the top.
- Garnish the top with additional mini peanut butter cups if desired.
- Place in refrigerator to chill a minimum of 2 hours before serving.
