Ingredients
For the biscuits you'll need:
- 2 cups All Purpose Flour
- 1 tbsp. Baking Powder
- ¼ tsp. Baking Soda
- 1 ¼ tsp. Salt
- 6 tbsp. Chilled Butter (Cut into small pieces)
- 1 cup Cold Buttermilk
For gravy you will need:
- 1 lb. Pork Sausage
- ⅓ cup All Purpose Flour
- 2 tbsp. Butter
- 2 cups Whole milk
- Salt To taste
- Pepper To taste
- Olive Oil For frying
Instructions
For the biscuits:
- Combine all the dry ingredients in a large mixing bowl.
- Cut in the butter with a pastry cutter or fork until pieces of butter are broken down. (Avoid using bare hands because because butter should remain cold.)
- Add in buttermilk and combine with spatula just until it forms a shaggy dough.
- Sprinkle plenty of flour onto flat surface and place dough on top, and with hands form it into a flat mass. Knead by folding dough in half, flattening, and folding in half again.
- Then with rolling pin, roll out dough to about 1/2" thick. Use biscuit cutter to cut individual biscuits.
- Place on cookie sheet lined with parchment paper and bake at 425º for 12-14 minutes.
For gravy:
- Coat bottom of large saucepan with approx. 2 tbsp. olive oil and heat on stove over medium high heat.
- Fry pork sausage in saucepan until sausage is broken into small pieces and it is fully cooked.
- Add butter and allow it to melt.
- Sprinkle flour over sausage and continue to cook for a few minutes until the sausage soaks up all the flour.
- Slowly add in half of the milk and immediately and consistently mix until milk starts to thicken.
- Add in remaining milk and continue mixing.
- When gravy thickens to desired consistency, add salt and plenty of cracked black pepper.
- Pour of freshly baked biscuits and enjoy!

[*Substitution for buttermilk: add 1 tbsp. white vinegar OR 1 tbsp. fresh lemon juice to every 1 cup of whole milk. Stir and let stand for 5-10 mins.]
