CORNED BEEF FLAUTAS & CABBAGE CURTIDO With Mexican & Salvadoran Twist
If you're looking for something fun to make for St. Patrick's Day, other than the usual Corned Beef & Cabbage, Try these Corned Beef Flautas & Cabbage Curtido. It's a Mexican and Salvadoran twist on things, and it's delicious. Flautas are rolled tacos or taquitos, and Curtido is a pickled slaw packed with all sorts of fresh flavors. Putting both together is just a wonderful combination. One, I'm sure you'll never see anywhere else. Read on for the easy recipe.

- 1/2 Large cabbage, finely shredded
- 1 Large carrot, grated
- 1/2 Large red onion, sliced thin
- 2 Jalapeños, chopped (seeds left in)
- 1 tsp. Salt
- 2 tbsp. Oregano
- 1 cup White vinegar
- 2 cups Water (Plus approx. 6 cups boiling water for blanching)
- 1 12 oz Can corned beef
- 1 dozen Corn tortillas
- Vegetable oil for frying *toothpicks
Instructions
- For Curtido (Pickled Cabbage Slaw):
- Place shredded cabbage in a colander or sieve and pour boiling water over cabbage to blanch it, while letting water drain out.
- Immediately run cold water over cabbage to stop it from cooking.
- Drain completely and place blanched cabbage in a large bowl along with carrot, onion, jalapeños, salt, and oregano.
- Mix well. In a large jar, pour 2 cups water and 1 cup vinegar and stir.
- Add cabbage slaw into vinegar & water and shake/stir well.
- Let stand. No need to refrigerate.
- Slaw will become pickled with time and is especially better the next day.
- For Corned Beef Flautas:
- Heat corn tortillas on a skillet and cover to keep warm.
- Place 2-3 Tbsp. of corned beef along one side of each tortilla.
- Roll to form flauta. Use a toothpick to hold together.
- Fry in vegetable oil until golden. Place on paper towels to drain excess grease.
- Serve while hot.

I had never had Corned Beef Flautas with Curtido before, but when I was trying to come up with ideas for St. Patrick's Day, I had a feeling this combination would work. And, boy did it! My husband, daughter and I loved it!
Best of all, we had plenty of leftover Curtido and we were able to enjoy it with different foods in the days to come. (I even put it on pizza!) You'd be surprised how it adds a level of freshness to everything. Anyway, I hope you give this recipe a try.
