FOCACCIA ART

Materials
- 2 1/2 cups Water Warm
- 2 tsp. Dry Active Yeast
- 2 1/2 tsp. Honey
- 5 1/3 cup All Purpose Flour
- 2 tbsp. Kosher Salt
- 1/4 cup Olive Oil Extra Virgin
Instructions
Preparation Day
- Put 2 1/2 cups warm water in medium size bowl, add dry yeast and stir, then add honey and continue stirring until dissolved. Set aside.
- In separate bowl, mix together flour and kosher salt. Pour yeast water into flour mixture and form dough. Add 1/4 cup extra virgin olive oil and continue to knead dough. Cover and let rise in warm place 1-2 hours (1st rise)
- Once dough has doubled in size, place it onto a well-greased cookie sheet or pan. (Use approximately 2-3 Tbsp. olive oil to grease pan. Gently stretch dough to fill pan. Don't worry if it doesn't all the way to the edges.
- Cover with saran wrap and place in refrigerator overnight for second rise.
Next Day
- Take focaccia dough out of refrigerator and let stand for half an hour, until it comes to room temperature. Then dip fingertips in olive oil or water and dimple the dough with fingertips, being careful not to poke holes through the dough.
- Drizzle more olive oil on top and brush to cover entire surface. Sprinkle a little kosher salt to taste. At this point you can bake as-is, or add your favorite toppings such as rosemary & garlic. You can get creative and paint a picture with vegetables and herbs. If you do so, brush them with olive oil to keep them from burning in the oven.
- Bake at 450º for approximately 20 minutes, or until golden brown.
