GROUND BEEF ENCHILADAS

Ingredients
  

  • 1 Lb. Lean Ground Beef
  • 2-3 Cloves Garlic Minced
  • 3 Tbsp. New Mexico Red Chile Powder
  • 2 Heaping Tbsp. All Purpose Flour
  • 1 Tsp. Ground Cumin
  • 1 Tsp. Ground Mexican Oregano
  • To Taste Salt
  • 3 Cups Beef Chicken, Or Vegetable Broth Or Water
  • 18 Corn Tortillas
  • For Frying : Oil
  • Of Your Choice : Grated Cheese I Used Muenster
  • Optional : Chopped Onion

Instructions
 

  • In A Large Pan Over Medium Heat, Brown The Ground Beef. Add Minced Garlic When Meat Is Almost Fully Cooked. Once Meat Is Cooked, Add In Flour And Mix For About 1 Minute So That Flour Is Fully Cooked.
  • Add In Chile Powder, Cumin, Oregano And Salt And Mix To Combine. Let Cook One Minute. Add Broth Or Water And Stir Well. Let It Come To A Boil, Reduce Heat To Low And Let Simmer Approximately 20 Minutes, Stirring Occasionally.
  • The Chile Sauce Should Thicken A Little As It Cooks. Remove From Burner Once Done.
  • Heat Oil In Separate Frying Pan, And Fry Corn Tortillas. Place On Paper Towels To Drain Excess Oil.
  • Preheat Oven To 350º
  • To Assemble, Pour A Spoonful Of Red Chile Sauce & Meat Mixture Into The Bottom Of A Baking Dish. (I Used A 9x13" Baking Dish) Place Layer Of Corn Tortillas Across The Bottom.
  • Add Chile Sauce On Top. Cover With A Layer Of Shredded Cheese. Sprinkle Onions On Top. Repeat The Layers Until Your Chile Sauce Is All Used.
  • Cover With Aluminum Foil And Bake For 30 Minutes. (Remove Foil For Final 5 Minutes.) Remove From Oven And Let Cool 10 Minutes Before Serving.
