Ingredients
- 4 Corn tortillas
- 2 cups Prepared New Mexican Red Chile Sauce
- 4 Eggs - cooked any style
- 2 tbsp Corn oil
- ½ cup Of shredded cheddar cheese
- 1 cup Of pinto beans
- ½ cup Of hash browns, or papitas
- Garnish: shredded lettuce, tomatoes and onions (optional)
Instructions
- Prepare red chile sauce and keep warm (see recipe below)
- Heat 1-cup pinto beans, and keep warm.
- Fry hash browns or papitas in a medium skillet, and keep warm.
- Dip 2 corn tortillas into red chile (or green chile) for 15 seconds each, and put onto a plate, side by side.
- Fry 2 eggs any way you choose and put them on top of the corn tortillas (I like my eggs over medium)
- Top eggs with red chile to cover completely.
- Top chile and eggs with cheese.
- Add beans and hash browns aside the eggs.
- Microwave for 1 minute, and top with garnish of shredded lettuce and tomatoes,
