For salad:
- 2 Chicken breasts, cooked & cubed
- 1 head Romaine lettuce cut into bite-size pieces large
- 1 Avocado sliced & cubed
- Red onion diced
- Crumbled feta cheese
- Pecans
For dressing
- 3 tbsp. Yellow mustard
- 3 tbsp. Sugar
- 1/4 tsp. Salt
- 1 tbsp. Poppy seeds
- 1 tbsp. Vinegar
- 1 tbsp. Water
- 3 tbsp. Olive oil
Instructions
- Making the Mango Avocado Chicken Salad is self-explanatory.
- You just mix all the ingredients together in a large bowl.
- The Poppy Seed Dressing, however, does need to be made in a particular order to avoid separation.
- In a small mixing bowl, put the mustard, sugar, salt, & poppy seeds and mix well.
- Add in the water and vinegar and mix until fully combined.
- Finally, add in the olive oil and whisk until it becomes thick and consistent.
- It's ready to serve and enjoy! By the way, refrigerate any leftovers.
