New Mexican Spiced Chicken Fried Rice - Cauliflower Rice
Red or Green?Here I am gonna teach you my newest fusion creation: Spicy Chicken Fried Cauliflower Rice with New Mexican Red Chile. By using some simple ingredients and a few short-cuts, you can have this recipe on the table in 30 minutes! This recipe also uses cauliflower rice, an alternative to traditional white rice. It's spicy, flavorful, and filling. You're gonna love it!

Ingredients
- 4 cups Riced Cauliflower
- 2 tbsp Canola Oil
- ¼ cup Red Bell Pepper Diced
- ¼ cup Celery Diced
- ¼ cup Green Onion Chopped (extra for garnish)
- 2 cups Frozen Peas and Carrots
- 2 Large Eggs
- 3 cups Cooked Shredded Chicken I used a half of a rotisserie chicken
For Spicy sauce:
- ½ cup Soy Sauce
- 1 tbsp Oyster Sauce
- 1 tbsp Sesame Oil Then another ¼ tsp for egg mixture
- 1 tsp NM Red Chile Powder
- 1 tsp Ground, or Fresh Ginger
- 1 tsp Ground, or Fresh Garlic
- ¼ cup Rice Vinegar
Instructions
- Rice half of a head of cauliflower (you can also use a 15oz bag of frozen riced cauliflower).
- Heat a large saute pan on medium high.
- Add 2 tbsp canola oil along with ¼ cup diced red bell pepper and ¼ cup diced celery.
- Cook for about 5 minutes.
- Next add ¼ cup chopped green onion and cook for another 2 minutes.
- Now add 2 cups of frozen peas and carrots and cook for an additional 2 minutes.
- Add 4 cups of the riced cauliflower and cook for another 5 minutes.
- Now add two beaten eggs in a separate bowl and add ¼ teaspoon of sesame oil to the eggs and mix.
- Create a well in the pan by pushing the rice mix to the outer edges of the pan.
- Add the egg mixture into the middle of the pan and cook until it becomes a soft scramble.
- Once the egg is scrambled, incorporate the egg mixture into the rest of the ingredients.
- Next add in 3 cups cooked chicken, combine completely into the mix and cook until heated through.
- Next add in the spicy sauce and mix until completely combined.
- At this point we are going to turn the heat down to low and cover the rice for 2 minutes.
- This ensures that the cauliflower rice is cooked through.
