Chile is a sauce made from red or green chiles and served hot over many New Mexican dishes. Chile does not use vinegar, unlike most salsas, picantes and other hot sauces. This basic yet versatile sauce can be used to create enchiladas or poured over chimichangas, tacos or burritos.

- Melt the butter in a saucepan over medium heat. Sauté the onion until soft.
- Stir in the flour. Add the broth. Then add chiles, garlic, salt and cumin. Simmer for 20 minutes.

This green chile recipe can be used as a green chile sauce on enchiladas or tamales and it can also be eaten straight up with perhaps a flour tortilla on the side. It can be made thicker or thinner depending on what you are using it for. Merely add more broth or water.This a great sauce to make when you need to tame the heat of some really hot chiles or make a milder sauce for people that can’t handle the heat
