PATRIOTIC CHERRY & BLUEBERRY PIE

It's made with fresh berries and the perfect flaky crust. (Of course, you can make this with a store-bought pie crust to make things easier on yourself.) Read on for the recipe.

- Rolling Pin (if using homemade dough)
- Star & stripe cutters or knife
- Pastry brush
- Aluminum foil

Ingredients
For the cherry pie filling:
- 4 cups pitted cherries (approx. 2lbs)
- 1/4 cup of water
- 2/3 cup sugar
- 1/4 cup corn starch
- 2 tbsp. fresh squeezed lemon juice
For the blueberry pie filling:
- 1 heaping cup fresh blueberries
- 1/4 cup of water
- 1/4 cup of sugar
- 1 tbsp. corn starch
- 1 tsp. fresh squeezed lemon juice
CRUST & TOPPING
- 2 pie crusts (store-bought or homemade)
- Egg wash, evaporated milk, or plain milk (for brushing)
Instructions
- Place all ingredients for cherry pie filling in a saucepan and let cook on stovetop over medium high heat.
- Once it begins to boil, lower the heat and let it continue to simmer approximately 5 to 10 minutes until the liquid has thickened.
- Take off the burner and let it cool.
- Place all ingredients for blueberry pie filling in separate, smaller saucepan and let cook on stovetop over medium high heat.
- Once it begins to boil, lower the heat and let it continue to simmer approximately 5 to 10 minutes until the liquid has thickened.
- Take off the burner and let it cool.
- Use one pie crust to fill bottom of pie plate and cut off any excess, keeping in mind the dough will shrink back when baked.
- Use a folded piece of aluminum foil to portion off 1/4th of the pie.
- Place cherry pie filling in larger, 3/4th portion of pie, while placing blueberries in smaller 1/4th portion.
- Carefully remove the aluminum foil.
- Then use the second pie crust to cut out stars and stripes.
- Place stripes over cherries and stars over the blueberries to mimic stars and stripes on the American flag.
- Then use an egg wash, or evaporated milk (even plain milk will work), and brush over the pie dough.
- If possible, use a protective shield around the rim of the pie plate to prevent the edges of the crust from burning.
- Bake at 375º for 30 minutes.
- Let cool completely before serving.
