POTATOES WITH GREEN CHILE

Potatoes with Green Chile, or Papas con Chile Verde, is a comforting down-home dish that’s easy to prepare and perfect for any meal of the day—breakfast, lunch, or dinner. This flavorful recipe was shared by viewer Kathy Tenorio from Albuquerque, who learned it from her mother, keeping family traditions alive in every bite.

Ingredients
  

  • 5 medium potatoes peeled & diced
  • 2 Tbsp. vegetable oil or canola oil
  • 6 green chiles roasted, peeled, seeded & diced (approx. 1 cup)
  • 2 cloves garlic minced
  • ½ an onion diced
  • 1 large tomato diced
  • 3 ½ cups water
  • salt to taste

Instructions
 

  • Fry potatoes on medium heat until tender. Add 3 1/2 cups water; bring to a boil. Add all other ingredients, simmer for 10 minutes or until liquid is slightly thickened. Serve with tortillas or crackers. Makes 6 servings.
