POTATOES WITH GREEN CHILE

Ingredients
- 5 medium potatoes peeled & diced
- 2 Tbsp. vegetable oil or canola oil
- 6 green chiles roasted, peeled, seeded & diced (approx. 1 cup)
- 2 cloves garlic minced
- ½ an onion diced
- 1 large tomato diced
- 3 ½ cups water
- salt to taste
Instructions
- Fry potatoes on medium heat until tender. Add 3 1/2 cups water; bring to a boil. Add all other ingredients, simmer for 10 minutes or until liquid is slightly thickened. Serve with tortillas or crackers. Makes 6 servings.
