Here, I'm going to teach you a simple recipe that's a must-know for New Mexican food lovers: Refried Beans. This one is extremely straight-forward, but after speaking with people in the New Mexican community, it seems that not everybody knows how to make them! I hope this recipe is helpful and that you all can use this recipe on your leftover beans. You're gonna love it!

Ingredients
  

  • 1 ½ - 2 cups Pinto Beans Whole cooked
  • 1 tbsp Bacon Grease Olive oil, canola oil will work as well

Instructions
 

  • In a cast-iron pan melt bacon grease, add beans and mix until combined with grease.
  • Now mash beans completely with a potato masher.
  • This is a quick and easy way to cook beans and use for meal prep throughout the week for tacos, tostadas, burritos, etc.
