SAUSAGE TORTELLINI SOUP

This cozy and comforting Italian-inspired Sausage Tortellini Soup features hearty sausage, tender cheese tortellini, and fresh spinach in a rich tomato broth. It’s an easy, one-pot meal that comes together quickly and warms you from the inside out—perfect for chilly evenings or when you're under the weather.

  • Stirring spoon or spatula
  • Measuring cups and spoons

Ingredients
  

  • 1 lb. Italian hot or mild ground sausage
  • 1/2 A white or yellow onion, chopped finely
  • 3 Garlic cloves, minced
  • 1 tsp. Oregano
  • 1 Small handful of fresh basil, chopped or 1 tsp. dried basil
  • Salt & pepper to taste
  • 1 tbsp. flour
  • 4 cups Of stock (vegetable, chicken, or beef)
  • 1 14oz. can tomato sauce
  • 1 Package frozen or fresh cheese tortellini
  • 2 cups Fresh baby spinach
  • 1/2 cup Of half & half

Instructions
 

  • Heat a large pot on stovetop over medium high heat and add enough oil to coat bottom of the pan.
  • When hot, add in Italian sausage and break it up as it cooks.
  • Add in chopped onion and let it cook a few minutes until translucent.
  • Next, add in minced garlic, along with oregano, basil, salt & pepper.
  • Mix well then add flour.
  • Stir and let cook a couple of minute.
  • Then pour in 4 cups of stock and can of tomato sauce.
  • Mix again and let it come to a boil.
  • Lower heat and let it simmer 5 to 10 minutes.
  • Add in the tortellini (If using frozen, turn heat back up) and fresh baby spinach.
  • Cook until tortellini is al dente and spinach is wilted.
  • Finally, add in half & half, let cook a couple minutes more, then remove soup from burner and enjoy while hot.
