SCRUMPTIOUS PUMPKIN SQUARES
Marcy InspiredThese Pumpkin Squares are absolutely SCRUMPTIOUS, and they're so easy to make, they're definitely easier than pumpkin pie. So with Thanksgiving coming up, this simple recipe is perfect. It comes to you courtesy of my nextdoor neighbor, Traci, who is a tremendous cook and baker. She makes all kinds of goodies from scratch, but with the busyness of the holiday season, I asked her to share something simple that anyone can make. And these pumpkin squares are the result of that!

- 9x13 inch baking dish
- Large mixing bowl
- Whisk or electric mixer
- Measuring cups and spoons
- Oven
Ingredients
- 1 (12oz.) can evaporated milk
- 3 Eggs
- 2 tsp. Pumpkin pie spice
- 1/2 tsp. Salt
- 1 cup Sugar
- 1 (1lb.13oz. which is the same as 29oz.) can pure pumpkin (Not pie filling)
- 1 Box yellow or vanilla cake mix
- 3/4 cup Butter
- 1 cup Chopped pecans or sliced almonds
Instructions
- Preheat oven to 350º.
- In large bowl, mix together evaporated milk, eggs, pumpkin pie spice, salt, sugar and pumpkin pureé until smooth.
- Pour pumpkin mixture into a 9x13" baking dish.
- Pour dry cake mix on top of pumpkin mixture as evenly as possible, ensuring that all of it is covered.
- Either melt the butter and pour it on top, OR cut butter into small pieces and lay them on top, spreading them out as evenly as possible across the surface of baking dish.
- Bake for 25 minutes.
- Remove from oven and sprinkle with chopped nuts.
- Return to oven and bake an additional 25 minutes.
- Remove from oven and allow to cool completely before cutting into squares.
