Cuisine Mexican
Ingredients
- the juice of 4 oranges, save the peelings
- the juice of 6 limes, save the peelings
- 1 cup of olive oil
- ¼ cup of soy sauce
- ¼ cup of apple cider vinegar
- 6 garlic cloves
- a small bunch of chopped cilantro to your liking
- 1-2 Tbsp. of New Mexico red chile powder
- 1 Tbsp. Mexican oregano
- 1 Tbsp. ground cumin
- 1 tsp. black pepper
Instructions
- Whisk all ingredients together until well combined and set aside. Place raw meat in large Ziplock bag or bowl. Pour marinade over meat and include some of the orange and lime peelings.
- Make sure meat is completely coated with marinade. Seal bag or cover bowl with saran wrap and place in refrigerate to marinate for 4 hours to overnight, depending on meat. Less time is required for more tender meat.
- Skirt steak, for example, needs less time. Chicken is best marinated overnight.
- When ready to grill, bring meat to room temperature before placing it on the grill. Do not overcrowd.
- Cook to your desired level of doneness. (In this video, I only cooked the skirt steak for 5 minutes on each side, so that it would be medium rare.) Remove from grill and let stand for 10 to 15 minutes before cutting into it. If using skirt steak, be sure to cut against the grain. And enjoy!
