I'm gonna teach you how to make Atole. This Blue Corn Atole Recipe has been around for many generations in my family. Atole is a porridge made with just a few ingredients: blue corn, water, milk, and some yummy spices. This Blue Corn Atole recipe is filling enough to have as a warm breakfast meal but can be enjoyed any time of day. It is also believed to be a healing remedy when you are sick. You're gonna love it!

Ingredients
  

  • 1 cup Ground Blue Corn Meal
  • 1 ¼ cup Purified Water
  • 1 cup Milk (Of your choice) I used oat milk
  • 1 stick Cinnamon
  • 2 cloves Whole
  • 2 tbsp Coconut Sugar You can use any sugar of your choice here; traditionally piloncillo is used

Instructions
 

  • Add blue corn meal to a medium to large bowl and whisk in the ¼ cup water.
  • Continue whisking until all the lumps are out, set aside.
  • In a medium sized soup pan bring 1 cup water and 1 cup milk up to a low boil.
  • Once boiling add the cinnamon, cloves and sugar.
  • Let the spices cook for about 5 minutes.
  • Remove the spices and gradually whisk in the blue corn paste.
  • It will thicken very quickly, so stir continuously.
  • Cook for 10 minutes.
  • The mixture will be the consistency of oatmeal.
  • If you would like it thinner (I like to drink it from a cup) add more boiling water until you reach the consistency you’d like.
  • You may also add more sugar, milk, or some extra ground cinnamon. Enjoy!
