Materials

  • 2 Red Bell Peppers Chopped
  • 2 15 oz. Cans Black Beans Rinsed and Drained
  • 3 ears Corn Cooked
  • 2 Avocados Large
  • 3 Limes For 1 tsp. Lime Zest and 6 tbsp. Lime Juice
  • 3 tbsp. Red Onion Finely Chopped
  • 2-3 cloves Garlic Minced
  • 3/4 cup Olive Oil Extra Virgin
  • 3 tbsp. Sugar
  • 2 tsp. Salt
  • 1/4 tsp. Cayenne Pepper

Instructions

  • Combine bell peppers, black beans, corn, onion, garlic, salt, sugar and cayenne pepper in large bowl and set aside.
  • In a medium-size bowl, make the vinaigrette, whisking together lime zest, lime juice, and extra virgin olive oil.
  • Pour vinaigrette over ingredients in a large bowl and let it chill in the refrigerator for a minimum of 30 minutes.
  • Before serving, cut and add avocado and gently stir.
