Materials
- 2 Red Bell Peppers Chopped
- 2 15 oz. Cans Black Beans Rinsed and Drained
- 3 ears Corn Cooked
- 2 Avocados Large
- 3 Limes For 1 tsp. Lime Zest and 6 tbsp. Lime Juice
- 3 tbsp. Red Onion Finely Chopped
- 2-3 cloves Garlic Minced
- 3/4 cup Olive Oil Extra Virgin
- 3 tbsp. Sugar
- 2 tsp. Salt
- 1/4 tsp. Cayenne Pepper
Instructions
- Combine bell peppers, black beans, corn, onion, garlic, salt, sugar and cayenne pepper in large bowl and set aside.
- In a medium-size bowl, make the vinaigrette, whisking together lime zest, lime juice, and extra virgin olive oil.
- Pour vinaigrette over ingredients in a large bowl and let it chill in the refrigerator for a minimum of 30 minutes.
- Before serving, cut and add avocado and gently stir.
