Ingredients
Perfect Steak
- 2 pieces New York/Sirloin steaks
- to taste Salt & Pepper For seasoning
- ½ stick butter
- 2 sprigs fresh rosemary
- 2 garlic cloves lightly crushed
- 1 tbsp high-heat oil (like avocado or vegetable oil)
Cheesy Baked Potatoes
- 4 yellow potatoes
- 1 stick butter melted
- Salt and pepper to taste
- 4 slices cheddar cheese
- Sour cream (Optional)
- Chives or green onions (Optional)
- Bacon bits (Optional)
Bacon-Wrapped Asparagus
- 1 bunch fresh asparagus woody ends trimmed
- 6–8 slices bacon
- 2 tbsp BBQ sauce
- 1 tbsp olive oil
- Salt to taste
Instructions
Perfect Steak
- Pat steaks dry with a paper towel and season on all sides with plenty of salt and pepper. (You can do this the night before and let chill in the refrigerator.)
- Heat a heavy skillet (preferably a cast iron skillet) with a high heat oil in it.
- Fry steak on one side until it forms a crust, then flip over and let the other side do the same.
- Add in butter as well as rosemary and garlic.
- Once melted, spoon butter infused with aromatics onto steaks, and do so continuously, until steak is cooked to desired level of doneness. U
- se thermometer to determine doneness.Rare - 120º, Medium Rare - 130º, Medium - 140º, Medium Well - 150º, Well - 160º.
- Once steak is cooked to your liking, remove from pan and let sit for 10 minutes before cutting into it.
Cheesy Baked Potatoes
- Preheat oven to 425º.
- Place potatoes, one at a time, between two chopsticks and using chopsticks as guides, cut slices into potato, cutting only as far as the chopstick will allow.
- Brush melted butter onto sliced potato being careful to get butter between the slices.
- Season with salt & pepper and bake for 30 minutes. Remove from oven and reduce oven temperature to 350º.
- Place cheese between every slice of the baked potato. Return potato to oven for additional 10 minutes and bake until cheese melts.
- Remove from oven and serve hot. Top with sour cream, chives or green onion, and bacon bits if desired.
Bacon-Wrapped Asparagus
- Preheat oven to 400º.
- Wash asparagus and cut off woody bottoms.
- Take a few asaragus and wrap a single slice of bacon around it, overlapping the bacon as you turn the asparagus around.
- Place onto a cookie sheet.
- Brush BBQ sauce over the bacon.
- Drizzle olive oil over asparagus and season with salt.
- Bake for 20 minutes.
- Remove from oven and serve hot.
