Cheesy Potato Casserole

This Cheesy Potato Casserole is so creamy and delicious, once you try it, you'll make it again and again. It really is the perfect side dish for all your family gatherings. I've been enjoying this potato casserole for years at my friend Charity's house because she and her husband host an annual Christmas feast. She triples the recipe for that gathering, and it's one of the first things to go! In fact, we jokingly call it, "Charity's Crack Potatoes" because they're so addicting. I finally had to ask her to join me in my kitchen to share her recipe. To my surprise, it was so easy to make. And, it turns out, this casserole in known by another name in the midwest: Funeral Potatoes. Go figure! An any rate, you'll have to read on for the full recipe.

Materials

  • 1 stick Butter Melted (1/2 cup)
  • 1 16oz. container Sour Cream
  • 1 10oz. can Mushroom
  • 7 stalks (approx.) Fresh Green Onion Chopped
  • 2 cups Grated Pepper Jack Cheese
  • 1 package Frozen Shredded Potatoes

Instructions

  • Preheat oven to 350º
  • Melt butter in small bowl and add chopped green onion to it. Mix well.
  • In separate large bowl, place sour cream, cream of mushroom and mix until combined.
  • Add in melted butter with onion, and grated cheese and continue to stir.
  • Add shredded potatoes and stir until all ingredients are well combined.
  • Spoon into 9"x13" ungreased casserole dish and bake 1 hour until top is golden brown.
