Frito Corn Salad (Perfect for Summer BBQs)
This Frito Corn Salad is my new favorite summer salad. Made with roasted corn, red & green bell peppers, red onion, Hatch green chile and a creamy, lightly spicy dressing, it's SO delicious. But then you have the added crunch of Fritos corn chips, and I'm all in! Take this side dish to a backyard BBQ and it's sure to be a hit. Read on for the recipe.

Equipment
- Large mixing bowl
- Small bowl (for dressing)
- Whisk or spoon
- Knife and cutting board
- Grill or skillet (if roasting corn)
Ingredients
For the Frito Corn Salad:
- 4 ears of corn roasted (or 2 12oz. cans of corn, drained)
- 1/2 diced red bell pepper
- 1/2 diced green bell pepper
- 4 oz. Hatch green chile chopped (or canned jalapeños)
- 1 1/2 cups shredded cheddar cheese
For the dressing:
- 2/3 cup mayonnaise
- 2 tsp. red chili powder
- salt & pepper to taste
Instructions
- Combine all salad ingredients in a large bowl.
- In separate bowl, whisk together mayo and chili powder until you have a smooth consistency.
- Pour dressing over salad and mix to combine.
- Cover and chill salad in refrigerator until you're ready to serve it.
- Add in Fritos corn chips at the last minute so they stay crunchy and enjoy!
