Ingredients
- 3 Tbsp. butter
- 2 cups cooked chicken shredded or cubed
- 3 cups milk
- 1 22 oz. can condensed cream of chicken soup
- 2 12 oz. cans whole kernel corn drained
- approx. 1 cup Hatch green chile roasted, peeled, seeded & chopped
- ½ cup your favorite tomato-based salsa
- ¼ cup sugar
- 2 Tbsp. all purpose flour
- 1 tsp. salt
- 1 tsp. ground pepper
Instructions
- Heat a large saucepan on the stovetop over medium high heat and melt butter in it. Add in chicken, milk, condensed cream of chicken, and corn.
- Mix to combine, then reduce heat to medium low and let simmer 15 minutes. Add in Hatch green chile and salsa. Stir and continue to let it simmer 5-6 minutes. Add in sugar, flour, salt, and pepper and stir until fully blended in.
- Let it cook an additional 5 minutes. Remove from burner and serve while hot. Optional: Garnish with shredded cheese, tortilla chips and/or green onion and enjoy!
