Hey Chile Heads! In this recipe, I'm so excited to teach how to make the classic New Mexican Green Chile Sauce from scratch. This sauce is a fundamental ingredient in many New Mexican dishes.

Ingredients
  

  • 2 tbsp. Flour
  • 2 tbsp. Canola oil or vegetable oil
  • 2 cups Green chile Chopped
  • ¼ cup Onion Chopped
  • ½ cup Tomatoes Finely Diced
  • 2 cups Water
  • ½ tsp. or 1 clove Garlic powder Fresh, minced
  • 1 tsp. Kosher salt

Instructions
 

  • Heat oil in medium size saucepan on medium to low heat.
  • When the oil is hot, add flour and stir constantly so it does not burn.
  • Cook for approximately one minute and then add onions and cook for another minute, stirring constantly;
  • Add chopped green chile, continue to stir consistently.
  • After another minute, add cold water slowly; add tomatoes, garlic and salt.
  • Once the sauce begins to boil, turn the heat to low and simmer for 20 minutes.
  • Sauce can be used right away for enchiladas, or store in the refrigerator for up to 7 days.
