Ingredients
- 1 1/2 Pound Pork sirloin roast, smoked/grilled, cubed (145 degrees internal temp)
- 1 Pound Hatch green chile, fire roasted, chopped
- 1- 14.5 Ounce Fired roasted diced tomatoes do not drain
- 1 Whole carton of chicken stock or vegetable stock
- 4 to 5 Cloves garlic, Minced
- 1/2 Onion, Chopped
- 4 to 5 Potatoes, peeled and cubed
- 1 teaspoon Of the following, plus more to taste: Mexican Oregano Granulated Onion Powdered Garlic Pepper Kosher Salt
- 1/2 teaspoon Cumin
Instructions
- Season Pork Sirloin with your favorite BBQ seasoningSmoke for 90 minutes on your grill to an internal temperature of 145 degreeswrap in foil,
- Refrigerate overnight in the morning, cube your pork into bite-size pieces,
- All ingredients to your pot: pork, tomatoes, seasoning, garlic, onion, green chile. Simmer for 4 hours, check for salt and seasoning.
- Add potatoes, cook for additional 45 minutes to one hour.
- Serve with your favorite chips, tortillas, salsa. Top with cheese and OMG, super YUM!
