Ingredients
- 2-3 corn tortillas per person
- 2 eggs per person
- a splash of milk
- diced onion
- shredded cheese of your choice
- salt to taste
- salsa
*avocado slices
Migas are also great with diced jalapeño or tomato, so feel free to add more to them.
Instructions
- Stack corn tortillas and cut them (like a pizza) into 8ths. Heat oil in large skillet and fry corn tortillas on both sides until crispy. You may need to do this in batches. Remove from pan and immediately season with salt.
- Set them aside for now. Add more oil to pan and sauté diced onion. In separate bowl, scramble eggs with a splash of milk then pour egg mixture into skillet with the onions.
- Use a spatula to move eggs around as they cook. When they're halfway cooked, add in fried corn tortilla and continue mixing so they get covered with egg. When fully cooked, top with shredded cheese of your choice and let melt.
- Serve immediately, top with your favorite salsa and avocado slices, and enjoy!
