MOTHER'S DAY BREAKFAST BAKE: Easy Recipe That Can Be Made in Advance and Baked Before Serving

I'm calling this a Mother's Day Breakfast Bake because any mom would feel special if someone were to make and serve this to her on Mother's Day. It's delicious and a little more special than your average breakfast. But don't just reserve this recipe for Mother's Day because it's easy enough to be made and enjoyed throughout the year. Equipment

  • 9x13" Baking dish
  • Mixing Bowls
  • Whisk or fork
  • Measuring cups & spoons
  • Oven

Ingredients
  

  • 2 cups frozen hashbrowns
  • 1 cup croutons
  • 1 1/2 cups grated cheddar cheese (or cheese of your choice)
  • 1 cup bacon bits
  • 10 eggs
  • 2 cups milk
  • 1 cup Hatch green chile chopped

Instructions
 

  • Preheat oven to 350º and spray a 9x13" baking dish with non-stick cooking spray.
  • Place hash browns into baking dish and spread out evenly.
  • Follow with a layer of croutons, grated cheese, and bacon bits.
  • In separate large bowl, beat together eggs and milk until well combined.
  • Add chopped chile to egg mixture and stir.
  • Pour egg mixture over other ingredients in baking dish.
  • Bake for 50 mins to an hour, until egg is fully cooked and cheese is melted to a golden brown.
  • Remove from oven and let cool just a few minutes before serving.
