One Pot Pasta with Italian Sausage & Creamy Tomato Sauce

- Wooden spoon or spatula

Ingredients
- 1 lb. pasta of your choice
- 1 lb. ground Italian sausage (I like the spicy kick from Hot)
- 1/2 a white or yellow onion, chopped
- 3 garlic cloves, minced
- 1 14 oz. can diced tomatoes
- 1-2 tbsp. tomato paste
- 4 cups chicken broth
- Salt, pepper & Italian seasonings to taste (I used fresh basil, oregano & parsley)
- 1 cup heavy cream approx.
- Grated parmesan to taste
- Olive oil
Instructions
- In large pot over medium high heat, pour enough olive oil to coat bottom of pan (approx. 2 Tbsp.).
- Once hot, add it Italian sausage and break up as it cooks.
- When it's mostly cooked but still a little pink in the middle, add in chopped onion and sauté.
- When onion starts to become transluscent, add in minced garlic.
- Stir to combine.
- Then add in diced tomatoes, tomato paste, salt, pepper, and other seasonings.
- Mix well, then add in uncooked pasta and chicken broth. Cook while stirring frequently for approximately 10 minutes.
- (If using fresh herbs such as basil or spinach, add in now.)
- Pour in heavy cream and add grated parmesan cheese.
- Let cook a few minutes more, turn off heat and garnish with parsley.
- Enjoy while still hot.
