ORANGE ALMOND MUFFINS

  • 4 muffin tins or ramekins
  • Mixing Bowls (1 large, 1 medium)
  • Spoon or spatula
  • Measuring cups & spoons
  • Baking Sheet (if using ramekins)

Ingredients
  

  • 2 1/4 cups all purpose flour
  • 1/2 cup of sugar (3/4 cup, if you want them sweeter)
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup sliced almonds
  • 1/2 cup milk
  • 1/2 cup orange juice
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp. grated orange peel
  • Powdered sugar for garnish

Instructions
 

  • In large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  • In separate bowl, mix together milk, orange juice, melted butter, egg and grated orange peel.
  • Pour wet ingredients into bowl with dry ingredients and mix until just barely combined.
  • Add in sliced almonds and continue mixing until almonds are dispersed into dough.
  • Grease 4 muffin cups or tins and fill with batter.
  • If using ramekins, place them on a baking sheet before placing them in oven.
  • Bake at 375º for 35 mins or until a toothpick inserted in the middle comes out clean.
  • Let cool for 5 mins and sprinkle powdered sugar on top.
