RED, WHITE & BLUE 4th OF JULY SALAD

Celebrate the 4th of July with this vibrant Red, White & Blue Salad by Marcy Inspired. Made with fresh watermelon, jicama, and blueberries, this festive side dish is tossed in a sweet and tangy coconut lime dressing—perfect for your summer BBQ gatherings.

Ingredients
  

  • 3 cups (approx.) Chopped seedless watermelon
  • 1 cup Chopped jicama
  • 1 cup Fresh blueberries
  • 1 Large lime, You'll use the zest and about 3 Tbsp. of the juice
  • ½ cup Coconut milk
  • 1 Tbsp. Maple syrup
  • A couple of dashes coarse sea salt or kosher salt
  • *Optional: fresh spearmint leaves
  • *I used a star-shaped cookie cutter to cut the watermelon into star shapes but that is not necessary. You can cut it into cubes.

Instructions
 

  • Place cut watermelon pieces, chopped jicama, and whole blueberries in large bowl.
  • If adding spearmint leaves, add them as well. Cover and refrigerate.
  • Then in separate bowl make dressing by mixing together 1/2 cup of coconut milk with the zest and juice from the lime.
  • Add in maple syrup and the salt and combine with whisk. Refrigerate and pour over watermelon, jicama & blueberries when you're ready to eat.
