I'm sharing my family's recipe for Salmon Patties. Here in New Mexico, many of us are practicing Catholics and have a lot of really delicious recipes for the Lenten Season. These Salmon Patties are a perfect addition to your Lenten meals this year. They're savory, delicious, and come together very quickly. You're gonna love them!

Ingredients
  

  • 2 - 6 oz. Salmon Filets Uncooked
  • 1 cup Panko Bread Crumbs
  • ½ cup Chickpea Flour
  • 1 tsp NM Red Chile Powder
  • 2 Green Onions Sliced
  • ¼ cup Green Bell Pepper Diced
  • 1 Large Egg
  • 2 tbsp Lemon Juice
  • 1 Lemon's Zest
  • 1 tsp Dried Dill
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

Instructions
 

  • Bring one cup of water to a low boil in a medium sized saucepan.
  • Add the salmon filets and cook for about 10 minutes.
  • The salmon will flake easily when done, let it cool down a bit before removing it from the skin.
  • Once cooled, flake the salmon in a medium to large bowl, add all ingredients, and mix until everything is well combined and patties hold together.
  • Form 3 inch in diameter patties, about ½ of an inch thick.
  • This recipe should yield about 8 patties.
  • Spray a nonstick pan with canola oil and place 3 patties at a time to cook for 2 minutes on each side, or until they are golden brown.
