Salmon Patties for Lent
Red or Green?I'm sharing my family's recipe for Salmon Patties. Here in New Mexico, many of us are practicing Catholics and have a lot of really delicious recipes for the Lenten Season. These Salmon Patties are a perfect addition to your Lenten meals this year. They're savory, delicious, and come together very quickly. You're gonna love them!

Ingredients
- 2 - 6 oz. Salmon Filets Uncooked
- 1 cup Panko Bread Crumbs
- ½ cup Chickpea Flour
- 1 tsp NM Red Chile Powder
- 2 Green Onions Sliced
- ¼ cup Green Bell Pepper Diced
- 1 Large Egg
- 2 tbsp Lemon Juice
- 1 Lemon's Zest
- 1 tsp Dried Dill
- ¼ tsp Salt
- ¼ tsp Black Pepper
Instructions
- Bring one cup of water to a low boil in a medium sized saucepan.
- Add the salmon filets and cook for about 10 minutes.
- The salmon will flake easily when done, let it cool down a bit before removing it from the skin.
- Once cooled, flake the salmon in a medium to large bowl, add all ingredients, and mix until everything is well combined and patties hold together.
- Form 3 inch in diameter patties, about ½ of an inch thick.
- This recipe should yield about 8 patties.
- Spray a nonstick pan with canola oil and place 3 patties at a time to cook for 2 minutes on each side, or until they are golden brown.
