Chile Caribe – Fresh Red Chile Sauce
Red or Green?Hey Chile Heads! In this recipe, I show you guys how to make New Mexican Red Chile Sauce from scratch -- only this time, we're making Chile Caribe. This is a different method from my last recipe, but can be useful to know when making dishes like tamales and carne adovada! I'm so excited to teach you guys all about New Mexican cuisine.

Ingredients
- 10-15 New Mexico red chile pods
- 4 cups Water
- 1 clove Garlic Large
- 1 tsp. Kosher salt
- 2 tbsp. Flour
- 2 tbsp. Canola oil
- ⅛ tsp. Oregano Dried
- 1 cup Water
Instructions
- Boil red chile pods in water for 5 minutes.
- Add chile pods to a blender with garlic clove and kosher salt.
- Cover chile pods with the water they boiled in (let water cool for about 5 minutes), just enough water to cover pods.
- Blend until very smooth.
- Strain the chile to remove any seeds through a strainer.
- Heat oil, add flour and cook for one minute.
- Add the chile puree, and whisk until smooth.
- Add approximately 1 cup of water, slowly, after sauce has started to boil.
- Add more water, if needed.
- Once the sauce has boiled, turn down the heat and add oregano.
- Let cook for 20 minutes, and add more salt to taste.
