Red or Green?
We are going to make a classic New Mexican side dish - Papitas. This post will be helpful if you are new to New Mexico food cooking or looking for quick recipes with potato. Ingredients
  

  • 2 medium to large Russet Potatoes
  • 2 tbsp Canola Oil
  • ½ tsp Salt
  • tsp Onion Powder
  • tsp Pepper

Instructions
 

  • Peel potatoes and dice into ¼-inch cubes.
  • Add canola oil to a medium sauté pan and heat on medium to high heat.
  • Add diced potatoes, onion powder, salt and pepper.
  • Stir so that the oil coats all of the potatoes and cook for about 1 minute.
  • Now turn the heat to low, cover with a lid and cook for about two minutes.
  • Remove the lid and stir potatoes, then replace the lid and cook for another 2 minutes, or until potatoes are crisp and soft.
