Red Chile Alfredo
Red or Green?I've got a great fusion recipe for your collection: Red Chile Alfredo. This amazing sauce is spicy and has that authentic New Mexican Red Chile flavor, as well as the creaminess and richness of a typical alfredo sauce. We had a lot of fun creating this recipe inspired by a request from a loyal audience. There really is no limit to what you can create when combining foods from different cultures! I really hope you give this recipe a try. Keep on cooking those spicy dishes!

Ingredients
- 6 tbsp Unsalted Butter
- 1 ½ cups Heavy Cream
- 1 large clove Garlic Minced
- ¾ - 1 cup Chile Caribe Check the 'Recipe Notes' section for Chile Caribe recipe
- 2 cups Parmesan Cheese Freshly grated
Instructions
- Prepare fettuccine, or linguine pasta according to package directions.
- Heat butter in a medium saucepan on medium heat.
- Add garlic and cook for about a minute, you don’t want to burn the garlic!
- Now add the heavy cream and cook for 5 minutes, it will reduce slightly.
- Add the red chile caribe, stirring constantly until completely incorporated.
- Cook for an additional five minutes to allow the flavors to get to know each other.
- Turn heat to very low and gradually add the parmesan cheese until smooth and creamy.
- Take off the heat and add noodles to the sauce, serve immediately.
- Top with grilled shrimp, or chicken.
